    Eggless Paneer Cake

    Ingredients:

    1/2 gallon Paneer
    pinch of cooking soda
    1/4 tsp. rava (sooji)
    1/4 tsp. maida
    1 cup sugar
    cardamom powder
    Method:

    Add sooji,Paneer,maida, soda, 1/2 cup sugar. Mix all very well.In a non-stick pan, lightly grease with butter and put on low heat. Add the paneermixture.
    Cover and let cook.when one side is light brown, remove the cake on a plate and slide it back to thesame pan to cook the other side to brown.Towards the other side, make chashni(sugar syrup). To the rest 1/2 cup sugar, add 1cup water.
    Add cardamom powder. When the paneer cake is done, pour hot chashni(sugarsyrup) on the top, while it still is in the heat.
    Cover and let cook in slow heat for a minute.
    Then off the heat and let the paneer cake cool in the room temperature.
    Cut into slices and serve.

    Palak Paneer


    Ingredients:
    Palak 2 cups(chopped)
    Kasuri menthi 4-5 tbsp
    Onions 2
    Panner 10-15 small cubes
    Zeera 1 tbsp
    Cinnamon 1
    Clove 1
    Garam masala 1/2 tbsp
    Red chilli powder 1/4 tbsp
    Ginger garlic paste 1/2 tbsp
    Lemon juice 2tbsp
    Method:
    1. Chop onions and fry till onions turn pink in colour.Cool it and grind to a fine paste
    2. Blanch palak and kasuri menthi and grind it to smooth paste.
    3. Deep fry panner cubes and keep aside.
    4. Heat oil add clove,Cinnamon,zeera and ginger garlic paste.Saute till ginger garlic paste is cooked.
    5. Add brown onion paste and saute till oil comes out.
    6. Add salt,garam masala powder and red chilly powder.Saute for 2 mins.
    7. Then add palak paste and if needed add little water.
    8. Cook on a low flame for 3-4mins and add panner cubes
    9. Cook till gravy is little thick.
    10. Just before serving add lemon juice.

    Paneer Peshwari


    Ingredients:

    Panner cubed 250gms
    Onion chopped 1
    Tomatoes chopped 1
    Onion sliced 1
    Tomatoes sliced 1
    Capsicum sliced 1
    Green chillies chopped 2
    Oil 3-4tbsp
    Jeera 1tsp
    Ginger garlic paste 1tbsp
    Turmeric powder 1/2tsp
    Jeera powder 1/2tsp
    Garam masala powder 1/2tsp
    Kasoori menthi 1 tsp (roast on a hot tawa for 10-15 secs.Remove and crush in between hands)
    Pepper powder 1/4 tsp
    Boiled cashew paste 1 tbsp (boil 5-6 cashew and then grind to a paste)
    Butter 1 tbsp

    Method:

    Heat oil in a kadai,add jeera and allow it crackle
    Then add chopped onions and saute until light brown colour.
    Add ginger garlic paste and chopped tomatoes.
    Cook till oil comes out.
    Mix turmeric powder,jeera powder,garam masala powder and pepper powder with 2 tbsp of water and add to the gravy.
    Now add green chillies and saute for 2 minutes.
    Then add sliced onions,sliced tomatoes,capsicum and 8-10 tbsp of water.
    Mix and cook for 2-3 minutes.
    Add cashew paste and salt taste.
    Cook for another 4-5 minutes.
    Lastly add crushed kasoori menthi and paneer cubes and cook for another 5 minutes or until panner is soft.

    Corn Paneer


    Ingredients:

    • 1 Cup Frozen Corn thawed in the microwave for 1 minute • 250gm Paneer (cubed)
    • 2 large Tomatoes diced
    • 1 tsp Coriander powder
    • 1 tsp Jeera (cumin) seeds
    • 1/2 tsp Haldi (turmeric) powder
    • 3/4 tsp Lal mirch (paparika) powder
    • 2 tsp Vegetable oil

    Method:

    •Mash the thawed corn in a blender/mixer till it turns into a thick paste.
    •Heat oil in a pan, once it is heated, splutter jeera (cumin) seeds, in it.
    •Then add coriander, turmeric and paparika powder and stir for 2 minutes on high flame.
    •Now add your chopped tomatoes. Stir it for another 4 minutes on high flame.
    •Reduce the heat and bring it to medium, add mashed corn to the vessel.
    •Stir for another 2 minutes and then add paneer to it. After stirring the whole thing for a minute or two.
    •Leave it on medium heat for about 10 minutes.
    •Corn Paneer is ready.

    Paneer Tikka


    Ingredients:
    • 1/2 kg Paneer, cubed into 3 cm pieces
    • 200 gms Plain yogurt
    • 2 tsp Garlic paste
    • 1 Lemon
    • 1 Onion, sliced
    • 2 tsp Ginger paste
    • 1 tsp Chaat masala powder
    • 2 tsp Tandoori masala
    • 1 tsp Black pepper
    • Salt to taste
    • Few drops of red food color
    • Cooking oil for brushing

    Method:

    •Mix together all ingredients except the ingredients for garnishing.
    •Leave it aside for half an hour.
    •Preheat oven to 350 degree F. Keep the paneer in a drip pan and bake for about 10 minutes.
    •Remove and brush the paneer with oil and again bake for 10 minutes.
    •Garnish with onion rings and lemon.
    •Ready to serve.

    Paneer Butter masala

    Ingredients:

    • 250 gm Paneer
    • 2 Onions (blanched and pureed)
    • 2tbsp Butter
    • 3 tbsp Tomato puree
    • 1 tsp Ginger garlic paste
    • 2 tbsp Cashew nut paste
    • 2 tbsp Kashmiri chili powder
    • 1 tsp Coriander powder
    • 1 tsp Turmeric powder
    • 1 tsp Garam masala
    • 1 Cup Fresh cream

    Method:

    •Cut Paneer in cubes and fry. Soak them in warm water so that they become soft.
    •Heat butter in a kadai and add the onion puree and sauté till they turn light brown in color. (This is also known as brown paste)
    •Add Ginger garlic paste to the brown paste mixture and sauté for sometime.
    •Then add the Kashmiri chili powder, coriander powder, cashew paste, tomato puree, turmeric powder, garam masala powder and salt and sauté for sometime.
    •Add the soaked paneer cubes, little water and allow it to cook till the gravy becomes semi-solid.
    •Finally garnish it with fresh cream.
    •Paneer Butter Masala is ready.

    Paneer Chilli


    Ingredients:
    • 500 gm Paneer (Prepare small Paneer balls)
    • 4 tbsp Corn Flour
    • Green chilli (10 to 15 medium sizes)
    • 2 tbsp Tomato Sauce
    1 tbsp Chilli Sauce
    • 2 tbsp Soya Sauce
    • Salt to taste • Oil for frying
    • 1 Green Capsicum (chopped)
    • 4 Onions

    Method:

    •Mix Paneer balls with corn flour fry it in a kadai till it become brown.
    •In a separate kadai, fry onions till brown.
    •Cut green chilli into small pieces and add it to fried onion.
    •Then put small pieces of capsicum and fry it for sometime.
    •Add Fried Paneer to it.
    •Then drop tomato/chill/soya sauce into kadai.
    •Add salt also and stir it for 3/4 mints.
    •Chili Paneer is ready.

    Shahi Paneer


    Ingredients :

    250 gms. paneer (cottge cheese)
    3 tbsp. ghee or butter
    1 onion chopped into strips
    1/2" piece ginger chopped fine
    2 green chillies chopped fine
    4 tomatoes chopped fine
    2 cardamoms crushed
    1/4 cup beaten curd
    1/2 tsp. red chilli powder
    1/2 tsp. garam masala
    1/2 cup milk, little salt, tomato sauce
    Method:

    Chop the paneer into 2" fingers.Heat half the ghee.
    Add onion,ginger, green chilli and cardamom. Fry for 3-4 minutes.Add tomatoes and cook for 7-8 minutes, covered.
    Add curd and cook for 5 minutes.Add 1/2 cup water and cool.
    Blend in a mixie till smooth. Heat remaining ghee, add gravy and other ingredients except milk and paneer. Boil to get a very thick gravy.Just before serving, heat gravy, add milk and paneer fingers and boil for 3-4 minutes.
    Garnish with chopped coriander and grated paneer.

    Kadai Paneer


    Ingredients:

    Paneer - 250 gms
    Hot water - 1 cup
    Ghee - 3 tbspn
    Onion - 1 medium(Chopped)
    Ginger Garlic Paste - 1/2 tspn
    Chili Powder - 2 tbspn
    Turmeric Powder - 1/4 tspn
    Tomato puree - 1 cup
    Tomato - 1 medium (Diced)
    Capsicum - 1 medium (Diced) optional
    GaramMasala - 1/4 tspn
    Salt - to taste
    Water - 1/2 cup
    Coriander leaves & Butter - for garnishing

    Recipe:

    Cut Paneer in to cubes.
    Add 1 tsp of ghee & saute paneer till it turns golden brown, then remove it.
    Drop Paneer cubes in hot water. After 5 minutes, drain the water and keep aside.
    Heat little oil in a pan. Add Onion and fry till it turns into golden brown. Then grind and make a paste of this fried onion.
    Heat ghee in a kadai(deep pan), add Onion paste and fry it well.
    Add Ginger Garlic Paste, Turmeric powder, Chili powder, Salt and fry till the smell of masala goes.
    Add Tomato puree and saute it for 5 minutes. Then add Paneer cubes, cover and cook for 2 to 3 min.
    Add 1/2 cup of water, Garammasala, Capsicum, Tomatoes and saute it well. Cover and cook for 5 min.
    Finally garnish with coriander leaves & butter flakes.
